Fresh Strawberry Cupcakes made from scratch! Moist 


and tender vanilla cupcakes contain fresh strawberries which are


topped with strawberry buttercream.



In this recipe artificial colors or flavors are not used – pure, fresh


strawberries in every bite.You know that summer is here (or 


almost here) when most of my recipes have berries in 


them.I love baking with fresh this time of year! These gorgeous 


pink strawberry cupcakes basically scream “It’s summer, eat 


ME!”

Strawberry Cupcakes recipe



Strawberry cupcakes

I enjoy the pretty shade of pink comes from strawberries, 


not food coloring. They are moist and tender and filled with 


real ingredients. The cake is flavored with vanilla extract 


and fresh pieces of strawberries. The cupcakes are yummy 


and buttery, and you can’t beat those diced strawberries 


running all throughout.



Tip: Use the best strawberries you can find. The more red 


and sweet and they are, the better! If your strawberries are 


slightly under ripe, or not very sweet, you might want to 


hull them, to make sure those flavorless white pieces don’t 


make their way into the cake or frosting.


 

Ingredients

Cupcakes:

 


  •  all-purpose flour (1 1/2 cups)

  • baking powder (1 tsp)

  • salt (1/4 tsp)

  • unsalted butter (1/2 cup)

  • granulated sugar (1 cup)

  • egg (1)

  • egg whites (2)

  • vanilla extract (1/4 cup)

  • milk (1/4 cup)

  • finely chopped strawberries (1 cup)

 

 

Frosting:



  • Unsalted butter softened (12 tsp)

  • powdered sugar (3 cups)

  • dried and freezed strawberries (1/2 cup)

  • strawberry puree (3 tsp)

  • vanilla extract (1/4 tsp)

  • fresh strawberries for garnish

Instructions

For the strawberry cupcakes;


1.       Preheat oven to 350°F. Butter a 12 cup muffin tin or line with paper liners and set aside.


2. In a medium bowl, whisk flour, baking powder and salt, set aside.


3. In a stand mixer with the paddle attachment, beat butter on medium-high speed for 2-3 minutes, until light and fluffy. Scraping the bowl as needed. Put in the sugar and beat until well combined. Reduce the mixer to low and add the egg, egg whites, and vanilla extract.


4. With the mixer on low, add half the flour mixture, mixing until just combined. Add the milk, mixing until just combined. Add the remaining flour and mix until just combined, scraping the sides of the bowl as necessary. Using a rubber spatula, carefully fold in the chopped strawberries.


5. Split the batter evenly among the prepared muffin cups. Bake for 18-20 minutes, until a toothpick inserted into the center of the cupcakes comes out clean. Transfer the muffin tin to a wire rack to cool completely before icing.


Frosting:


1.       If using freeze dried strawberries: 


In a small food processor, combine about 1/2 cup freeze dried strawberries until they turn into powder. Pour the powder into a fine mesh sieve, discarding the solids and seeds, keeping the fine powder that came through the sieve. Measure out two tablespoons of the powder to use in the frosting. Proceed below. 


2.       With a hand mixer, or stand mixer fitted with the paddle attachment, beat butter for 2 minutes, until smooth and creamy, scraping down the sides of the bowl and the beater as necessary. Add the powdered sugar, 1/2 a cup at a time, beating until combined. 


3. Add strawberry puree, freeze dried strawberry powder (if using), vanilla extract and jam, and beat on medium speed until fully combined, being sure to scrape down the sides of the bowl and beater as needed. If necessary, adjust the consistency by adding more powdered sugar or more strawberry puree, to thicken or thin it out. Place in a piping bag, or use an offset spatula to frost cupcakes (this makes enough frosting to generously frost the cupcakes). Garnish with sliced strawberries, if desired.

Ingredients:

Batter of cupcake


  • Strawberry yogurt (1 cup)

  • Eggs (3)

  • Vegetable oil (1/2 cup)

  • Sugar (3/4 cup)

  • Flour (1 ½ cup)


  • Baking powder (1 tsp)

 

Whipped cream frosting


  • Gelatin (1 tsp)

  • Cold water (4 tsp)

  • Whipping cream (1 cup)

  • Powdered sugar (1 tsp)

  • Pureed strawberries (5 large and cleaned)

Instructions:

Batter of cupcakes:

 

  • Take an oven and preheat it to 350 degree. Take a 12 cupcake pan and apply grease on it.

  • Take a hand mixer and a medium sized bowl and on low and medium speed lightly beat eggs for about 30 seconds and then add vegetable oil sugar and yogurt and baking powder and then again beat it for 1 minute more till it becomes smooth. After that pour it into cupcake pan coated with grease and then bake it approximately for about 20 minutes or test it with a knife and toothpick when inserted in cake comes out clean.

Whipped cream frosting:


  • Take gelatin and cold water and combine them in a small pot. Wait for 10 minutes or until thick, place it over low heat and mix it well till al the gelatin is dissolved.

  • Now remove heat and let it cool.

  • Take a medium bowl and mix icing sugar and whip cream until soft peaks are formed, now add gelatin & pureed strawberries and continue the beating process. Whip it high till it becomes stiff.

  • After that cool the cupcakes with frosting.

 


So that’s all for this recipe and it is also called white cakes

as in appearance they look white of course they also have


straw inside them and you will never get to know until you

Ingredients:

Cupcakes of white color



  • Cake flour (1 ½ cup)

  • Baking powder (2 tsp)

  • Salt (1/2 tsp)

  • Unsalted butter room (1/2 cup)

  • Granulated sugar (1 cup)

  • Vanilla (1 ½ cup)

  • Egg whites (3 large size)

  • Milk (1/2 cup)

 


Strawberry filling


  • Hulled and diced strawberries (1/2 pound)

  • Granulated sugar (2 tsp)

  • Lemon juice (1/2 tsp)

  • Cornstarch (1/2 tsp)

 


Frosting whipped buttercream


  • Room temperature unsalted butter (1 cup)

  • Powdered sugar (4 cups)

  • Vanilla extract (2 tsp)

  • Salt (1/8 tsp)

  • Heavy cream (1/3 cup)

 


Instructions:

White cupcakes


  • Take an oven and preheat it to 350 degree and also line cupcake pan with liners.

  • Place them aside.

  • Take dry ingredients: baking powder, cake flour and salt and add them in a medium bowl and set them aside.

  • Take granulated sugar and butter cream and place them in a large bowl. Also take egg whites & beat until light and fluffy for about 1 minute.

  • Take butter mixture and add flour mixture in thirds and also add milk and stir it until all the ingredients are well mixed and the batter is smooth. Try not to over mix it.

  • Take the cupcake liners and pour batter into it and fill them 2/3 each. Place it in preheated oven for about 16-18 minutes or till the knife or toothpick comes out clean.

  • After the process is done take it out from oven and allow it to cool for about 5 minutes before transferring them into a wire rack to finish cooling.

 


Strawberry filling


  • Take a saucepan and apply medium heat then add sugar, strawberries lemon juice and cornstarch and stir them well to combine.

  • When it reaches to its boiling stage reduce the heat to medium-low & cook for about 4-5 minutes till the mixture has thickened. Turn off the heat and let it cool.

  • Now carefully and gently core the center of each cupcake about ¾ circle and then fill it with the strawberry filing. An important note: don’t core through the bottom of your cupcake and leave at least ½ ‘’on the bottom to avoid fall through when unwrapped.

 

Frosting whipped buttercream


  • Take a large bowl and add room temperature butter & beat till creamy for about 1 minute.

  • Take confectioners & slowly mix till all the ingredients are fully combined. Then whip at high speed for 3 minutes until it becomes fluffy.

  • Take vanilla extract and heavy cream and add them to mixture & mix for additional 4 minutes till light and fluffy.

  • Now add more heavy cream to reach desired consistency.

  • Take a knife and spread frosting onto the cupcakes and serve.

Strawberry cupcakes with cream cheese icing are fluffy, 


moist and perfect. They are also called Pink strawberry 


cupcakes and are one my favorite cupcakes.

 

These are the ingredients and steps required to make this 


amazing cupcake recipe.

 


Strawberry cupcakes with cream cheese frost




Ingredients:

Strawberry cupcakes



  • Sugar (3/4 cup)

  • Unsalted butter (6 tsp about 86g)

  • Sour cream (6 tsp about 90ml)

  • Strawberry extract (2 tsp)

  • Egg whites (3)

  • All-purpose flour (1 ¼ cups)

  • Baking powder (2 tsp)

  • Salt (1/4 tsp)

  • Milk (5 tsp about 75ml)

  • Strawberry puree (3 tsp about 45ml)

  • Pink food color drops (4)


Cream cheese frosting

 

  • Room temperature cream cheese (8 oz about 226g)

  • Room temperature butter (6 tsp about 86g)

  • Powdered sugar (4 cups about 460g)

  • Vanilla extract (1 tsp)

 


Topping


  • Red wilton candy melts (5 oz)

  • Sprinkles

Instructions:

 

  • Take an oven and preheat it to 350 degrees and also get ready a cupcake pan with cupcake liners.

  • Take butter & sugar and beat them for about 2-3 minutes or until they are light in color and also fluffy.

  • Now add strawberry extract along with sour cream and stir them well till well combined and also add egg whites and mix them well.

  • Take 2 separate medium sized bowls and add dry ingredients in one bowl and combine milk and strawberry puree in another bowl.

  • Now add half of dry ingredients to the batter till well combined and add reaming dry ingredients to the milk and strawberry mixture.

  • Add pink food color and stir it well.

  • Now it’s time to fill up the cupcake liners and after filling bake them for about 15-17 minutes or until a knife inserted in the cakes comes out clean.

  • As the cupcakes are cooling prepare the frosting and also beat cream cheese and butter till smooth.

  • Add vanilla extract and powdered sugar and mix them well until smooth.

  • Now it’s time for making the topping. To prepare the topping take a small bowl and melt the candy melts according to package instructions.

  • Pour the melted candy from small bowl into the piping bag fitted with Wilton tip #3. Add a few sprinkles and then allow it to dry and firm.

  • Pipe the frosting of cream cheese onto the cupcakes and then add topers.

Ingredients:

 

  • All-purpose flour (11/2 cups)

  • Cake flour (11/2 cups)

  • Baking powder (1 tsp)

  • Salt (1 tsp)

  • Unsalted butter (1 cup or 2 sticks )

  • Sugar (13/4 cups)

  • Eggs (4 large)

  • Vanilla extract (2 tsp)

  • Milk (11/4 cups

  • Hulled Strawberries (10 ounces)

  • Strawberry Meringue buttercream


Procedure:


  • Take an oven and preheat it to 350 degrees and also take 12-cup cupcake pans with paper liners.

  • Take a medium bowl and add flours, baking powder and salt and mix them well and then place them aside.

  • Take a bowl and fit an electric mixer with paddle attachment and then beat butter and sugar until they become light and fluffy. Also take 3-4 minutes to scrap the sides of the bowl. Add eggs one by one and beat them and as the mixer is on low speed pour in the four in three parts along with the milk and at beginning and ending with flour, beat until combined after each audition. Fold in strawberries.

  • Now pour the batter evenly among the prepared cups as each cup should be filled about two-thirds or about 2 ounces each. Now start baking for 20 minutes by rotating the pans halfway through till the cupcakes are golden brown and the cake tester comes out clean. Put pans to wire rack and let them cool for 5 minutes. Takeout cupcakes from pan and allow them to cool completely on wire racks.

  • Take strawberry meringue buttercream & apply about 1/2cup frosting on the top of each cake. Now garnish with fresh and juicy strawberries, cut them into halves or even quarters (it’s up to your choice) depending on the size.

 

Strawberry cupcakes without jello


Strawberry cupcakes with strawberry jello are amazing but 


in this post I am going to show how to make Strawberry 


cupcakes without jello. By the way this recipe is also called 


Strawberry cupcakes with cake mix. Below are the steps 


and ingredients to make this amazing recipe.

 



Strawberry cupcakes without jello




Ingredients:


  • White coke mix (1 box about 15.25 oz)

  • Water (11/4 cup)

  • Vegetable oil (1/2 cup)

  • Greek yogurt (1/4 cup)

  • Boiling water (1 cup)

  • Cold water (1/2 cup)

 


Procedure:


  • Take an oven and preheat it to 350 degrees and line up 2 cup cake trays with liners and put them aside.

  • Take a large sized mixing bowl and add water, oil and cake mix & Greek yogurt. Now start blending them for about 2 minutes or till well combined.

  • Put it evenly into your prepared liners & bake them for about 23 minutes or until they just turn golden.

  • Place them aside for cooling for about an hour.

  • Once they are fully cooled sprinkle some strawberry pieces as topping and place them into fridge for about 2 hours.

  • After that you can also frost it with your favorite buttercream recipes and some more sprinkles.
